Chymotrypsin, also known as chymotrypsin, is a peptide endonuclease extracted and isolated from the fresh pancreas of cows (pigs). It is a white, slightly yellow crystalline or amorphous powder, easily soluble in water and insoluble in organic solvents. Relative molecular weight 24000, optimal pH 8~9. Dry state stability, rapid deactivation in aqueous solution, with aqueous solution at pH 3-4 being the most stable. When acting on proteins, it preferentially hydrolyzes the peptide bonds formed by the carboxyl groups of L-tyrosine and L-phenylalanine.

This product is purified through multiple crystallization and further prepared using chromatography and ultrafiltration techniques.
