Nature and application:
    White crystalline powder, sweet. It is a reducing sugar, soluble in water, slightly soluble in alcohol, insoluble in ether.
    Pigmentation. The Maillard reaction of maltose is weaker than that of glucose, which can be controlled from the heating temperature and time, and there is basically no reaction below pH5.
