Carboxypeptidase B (CPB) (EC3.4.17.2) is an exocrine protease belonging to the family of metallocarboxypeptidases A and CPA/CPB. Each molecule contains a Zn atom and can selectively hydrolyze arginine and lysine at the carboxyl end of proteins or peptides. Carboxypeptidase B preferentially cleaves alkaline amino acids, but at the same time, CPB can also cleave some non alkaline amino acid residues. CPB has a molecular weight of 35kD, an isoelectric point of 6.0, and an appropriate pH of 7-9. Its activity is competitively inhibited by lysine or arginine, while metal ion chelating agents such as EDTA inhibit enzyme activity.
