Description: Light beige to light brown powder, odorless, soluble in 20 times water as a viscous liquid, with negatively charged hydrophilic particles, acidic. It has hygroscopicity and is insoluble in ethanol, dilute acids, and other organic solvents. Adding sugar and acid, it becomes gel semi-solid jelly. Pectin is a general term for a type of polysaccharide, which can be classified into two types based on the composition of pectin: homogeneous polysaccharides and heteropolysaccharides: homogeneous polysaccharide type pectin such as D-galactose, L-arabinose, and D-galactouronic acid glycan; Zaduo candy gum is the most common and is composed of galacturonic acid glycan, galactan, and arabinose in different proportions, commonly known as pectinic acid.
