Principle: Phosphomolybdic acid and phosphotungstic acid are easily reduced by p-h-e-n-o-l-i-c compounds under alkaline conditions, resulting in a blue reaction. Proteins contain tyrosine with p-h-e-n-o-l-i-c groups, which is why this reaction occurs. The sensitivity of the Folin p-h-e-n-o-l method is 100 times higher than that of the biuret method
