Appearance: White powdery crystals, commonly known as D-trehalose, with a sweet taste. Melting point 96.5-97.5 ºC. Optical rotation+178 °. It is soluble in water and hot alcohols, insoluble in ether, and cannot be reduced by Fehling solution. It loses crystalline water at 130 ºC. Trehalose is a non reducing sugar composed of special disaccharide molecules, with very stable characteristics. It can form a special protective film on the surface of cells under harsh conditions such as high temperature, high cold, and dry dehydration, effectively protecting the structure of biological molecules from damage, thereby maintaining the life process and biological characteristics of living organisms
