Appearance: White or light yellow sheet-like or strip like substance or powder. It is the main component of the hard keratin and exoskeleton of insects and crustaceans. Soluble in concentrated h-y-d-r-o-c-h-l-o-r-i-c a-c-i-d, sulfuric acid, glacial acetic acid, and 78% to 97% p-h-o-s-p-h-o-r-i-c a-c-i-d, almost insoluble in water, dilute acid, alkali, ethanol, and other organic solvents. LD50 (rat, intravenous) 50mg/kg. The deacetylated product of chitin is chitosan. Due to its different sources, chitin has three structural forms - α, β, and ν. The molecular chains of alpha chitin are arranged in an antiparallel manner, exhibiting strong intermolecular hydrogen bonding forces. The main chains of β - chitin molecules are arranged in a parallel manner with weak intermolecular interactions. Gamma chitin molecules have both of the aforementioned molecular structures. Alpha chitin is extracted from the shells of shrimp and crabs. β - Chitin can mainly be isolated from the feather shells of soft fish or squid
