Appearance: White or yellow to yellow brown powder, granular or flake like. Corn protein. The density is about 1.226. It can be soluble in 90% ethanol, propanol, acetic acid, p-h-e-n-o-l, etc., as well as 1.4% c-a-u-s-t-i-c s-o-d-a or 1.97% caustic potassium aqueous solution. Insoluble in water, but able to absorb 2% to 10% of water. When not dried or left in a solvent for a long time, it becomes denatured and difficult to dissolve in the aforementioned solvents. In a dry state, it does not decompose below 135 ºC

  Corn alcohol soluble protein is a mixture of proteins with an average molecular weight of 25000~45000. It is formed by hydrogen bonding between hydroxyl groups and imines on the peptide main chain, forming an alpha helix; Has bottom surface energy and unique film-forming properties. In an alcohol aqueous solution, it forms an irregular cluster structure, but after solvent evaporation, it forms a transparent and glossy film with characteristics such as moisture resistance, oxygen isolation, UV resistance, fragrance retention, oil resistance, and anti-static.

  After treating with 0.6% salt water and removing the albumin and globulin fractions, corn gliadin is usually extracted from the endosperm using an ethanol solution (70-80% ethanol) to obtain the protein fraction. The corn alcohol protein produced in this way does not contain any other proteins.

  Corn zein has unique solubility. It does not dissolve in water or anhydrous alcohols, but can dissolve in alcohol aqueous solutions with a volume fraction of 60% to 95%. Corn alcohol soluble protein has a special amino acid composition, and its molecules not only contain a large number of hydrophobic amino acids, but also lack amino acids with charged acidic, basic, and polar groups, and also contain a lot of sulfur-containing amino acids. Corn alcohol soluble protein is also soluble in organic solvents such as strong alkali, sodium dodecyl sulfate (SDS), high concentration urea, p-r-o-p-y-l-e-n-e glycol, and acetic acid.

  Zein also has unique film-forming properties. Corn zein is rich in sulfur-containing amino acids, and protein molecules are connected by strong disulfide and hydrophobic bonds. This is the basis for the easy formation of a thin film of corn zein. After being coated as a membrane solution, as the solvent evaporates, the film dehydrates and dries, resulting in an increase in the concentration of protein in the membrane forming solution. When the concentration exceeds a certain value, the protein condenses and forms hydrogen bonds, disulfide bonds, and hydrophobic bonds between molecules to maintain the network structure of the film, forming a transparent and glossy corn alcohol soluble protein film.

   The average relative molecular weight of zein is about 25000~45000. The molecular weight of zein is generally measured by gel filtration method and sodium dodecyl sulfate polyacrylamide gel electrophoresis (SDS-PAGE), of which SephadexG-200 gel can be used for gel filtration method.

  Corn alcohol soluble protein itself and its hydrolysates have antioxidant properties. Foreign research and development have successfully dissolved fatty acids in zein solution for drying and fixing oil, such as dissolving linoleic acid and 4 times its amount of gliadin in ethanol. The powder obtained by spray drying has high antioxidant capacity and antioxidant stability. The film was obtained by dissolving fish oil fatty acids and twice the amount of corn alcohol soluble protein in 80% ethanol and drying it. Monoglycerides, diglycerides, triglycerides, and corn alcohol soluble protein were dissolved in ethanol to form films, each with strong antioxidant properties. DHA27% fish oil was encapsulated and powdered with alcohol soluble protein in a 1:1 ratio. It was stored in a dark place at room temperature for two months, and the peroxide value (oxidation value index) was almost undetectable. This is because corn alcohol soluble protein embedded in the oil blocks oxygen and is antioxidant. Therefore, corn alcohol soluble protein is the most suitable material for highly unsaturated fatty acids that are easily oxidized to resist oxidation and maintain antioxidant stability. It plays a significant role in oily foods and has enormous potential for application.

Biodegradable plastics
   The brittleness of the pure corn alcohol soluble protein film limits its use. However, if crosslinking agents (such as citric acid, formaldehyde, butanetetracarboxylic acid, etc.) are added to it, its tensile strength can be increased by 2-3 times. Adding ester compounds to corn zein for modification can improve its tensile strength, reduce its permeability, and also add antibacterial agents to inhibit the growth of pathogenic microorganisms. There are two types of biodegradable plastics made from zein: one is based on starch zein as the matrix, and the other is plasticized by adding fatty acids to zein.
